Kale And White Bean Soup With Italian Sausage

1tbsp. Olive oil
1 lb. of Chicken Italian Sausage
2 Garlic Cloves Chopped
1 medium sized Shallot Chopped
1 15oz can of Diced Tomato
15 oz anned White Beans Rinsed
1 bunch of Italian Lacinato (Dino) Kale
2 tsp Italian Seasoning
Dash of Red Pepper Flakes (optional)
48 oz Chicken Broth
Salt and Pepper to taste
Heat olive oil in a large pot over medium heat. Add sausage and cook until slightly browned, tossing occasionally, about 5 minutes. Remove sausage, while leaving the oil in the pan, and set sausage aside.
Add garlic and shallots. Cook until the shallots become soft. Add Italian seasoning, salt, pepper, a dash of red pepper flakes (optional), diced tomatoes, white beans, and chicken broth. Bring to a boil. Add kale and sausage and fold into the soup. Reduce heat to low and simmer for about 15 minutes until kale are tender. Serve warm.
