Yesterday I made the best pizza in the whole wide world! Okay maybe not whole wide world, but in my world it was amazingly delicious. All but two ingredients came from the garden. There is nothing like homegrown freshly picked tomatoes and basil.
Would you believe me if I told you it was quick and easy.
Preheat the oven to 400 degrees. Slice one large heirloom tomato shown below. You can use any tomato, I chose heirloom tomatoes because that is what I picked in the garden.
Brush the par baked pizza crust with olive oil. I like to use the Original 365 Organic Pizza Crust from Whole Foods Market. Any thin pizza crust will do. Place the sliced tomatoes on the pizza crust. Spread the tomatoes out evenly on the pizza crust and sprinkle shredded mozzarella cheese as shown in photo below.
Top the pizza with fresh basil and space them between the tomato slices. Sprinkle salt and pepper.
Bake the pizza in the oven for 10-15minutes. Or until the cheese is melted and crust is golden.
I like to have a salad with my pizza. It might be psychologically, Or as my husband says just playing with my mind, but it makes eating the pizza guilt free when having a salad along with it.
While the pizza was in the oven I harvested some baby leafy greens from the garden. Sliced a cold crisp cucumber that I harvested the day before and added it to the salad.
Open a bottle of wine or a bottle of your favorite beer or in my case root beer, and you have a great summer time meal.
Remember think fresh for really delicious meal.
