Perfectly Delicious Pesto Pizza!

Who ever created pizza was a genius!  Do you ever come home from work and wish you had already ordered Take Out?

Today is like one of those days.  I didn’t feel like making a mess in the kitchen and wish dinner was already made.

I think I may have found a solution to this.  Yes my friend, the solution is pizza.   At least it was today.  I already had a pizza crust just begging to be used, labor free shredded Colby cheese, and homemade basil pesto.  I thought to myself, what can I make with the following ingredients as I gazed into the refrigerator.  A light bulb came on “pizza”! Yeah baby! Pizza!

My mouth started watering the more I thought about what to top the pizza with. Would you believe me if I told you it was quick and easy? Not a whole lot of dishes to clean either.

Preheat the oven to 450 degrees. Chop two cloves of fresh garlic, slice one zucchini thin, and slice about half of a red onion thinly and set aside.

Brush the par baked thin pizza crust with a basil pesto.  Sprinkle the chopped garlic on top of the pesto evenly.

Place the sliced zucchini on the pizza crust.  Spread the zucchini out evenly on the pizza crust and sprinkle shredded Colby cheese over it as shown in photo below.

Top the pizza with thinly slice red onions.   Sprinkle salt and pepper.

Bake the pizza in the oven for 10-15minutes. Or until the cheese and crust is golden.

 

Open a bottle of wine or a bottle of your favorite beer or in my case root beer, and you have a great meal!  Cheers!!

Remember think fresh for a really delicious meal.
