Oatmeal Chocolate Chip Cookie with Pecans

These chunky oatmeal cookies are packed with oats, chocolate chips, nutty pecans, and are easy to make. You and your family's inner cookies monster will love the combination of the flavors. This is a chocolate chip and pecan version that is not shy in the spices. A warm cup of medium roast coffee or a cup of black chai tea will make a complement pair.

Ingredients

  • 1 1/2 cups melted butter (1 1/2 Stick of butter)
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup bakers sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 1/2 cups unbleached fine pastry flour
  • 1 tsp baking soda
  • 1 1/2 tsp ground korintje cinnamon
  • 3 cups quick or old fashioned uncooked oats
  • 1 cup semi sweet chocolate chips
  • 1/4 cup chopped pecans

Instructions

  •  Preheat oven to 350° Fahrenheit
    2. In a large bowl, beat melted butter and sugar until creamy.
    3. Add eggs, vanilla, and beat well.
    4. in a separate bowl, combine flour, baking soda, cinnamon.
    5. Add combined dry ingredients into the large bowl with butter, egg, and sugar bowl. Mix well.
    6. Add oats and mix well.
    7. Stir in chocolate chips and pecans until evenly distributed.
    8. Drop dough by round tablespoonful onto an ungreased cookie sheet.
    9. Bake 8-10 minutes or until lightly golden brown. when finished baking transfer cookies to a cooling wire rack and let it cool for about a minute. Before storing the cookies in a highly sealed container, make sure the cookies are completely cool.
