”Who stole the cookie from the cookie jar?” Remember that tune we used to sing when we were kids. I can totally without a doubt relate to the individual that created the lyrics. Cookies around are gone by the end of the night. I’m lucky if a cookie or two survives to the following morning. When you ask anyone if they ate the disappearing cookies, you get glossy eyes staring back at you with lips tightly sealed. Sesame Street, a children TV show is on to something. There’s definitely a Cookie Monster. Would you agree with me that it’s possible that there is one in every household? No one will admit being a cookie monster.
Breakfast and dessert are my favorite part of any meal! Occasionally, I’ll have a cookie with my morning coffee for breakfast. That’s one way to have both of my favorite meal in one sitting. I know, I know, cookies are not meant for breakfast. I have to admit, there delicious.
I’d like to share a nutty and chunky oatmeal chocolate chip pecan cookie recipe that is sought after by the cookies monsters that reside in my house. It comes with a disclaimer, “Beware, this recipe may bring Cookies Monsters to your home”.
Oatmeal Chocolate Chip Cookie with Pecans
Ingredients
- 1 1/2 cups melted butter (1 1/2 Stick of butter)
- 3/4 cup firmly packed brown sugar
- 1/2 cup bakers sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1 1/2 cups unbleached fine pastry flour
- 1 tsp baking soda
- 1 1/2 tsp ground korintje cinnamon
- 3 cups quick or old fashioned uncooked oats
- 1 cup semi sweet chocolate chips
- 1/4 cup chopped pecans
Instructions
- Preheat oven to 350° Fahrenheit2. In a large bowl, beat melted butter and sugar until creamy.3. Add eggs, vanilla, and beat well.4. in a separate bowl, combine flour, baking soda, cinnamon.5. Add combined dry ingredients into the large bowl with butter, egg, and sugar bowl. Mix well.6. Add oats and mix well.7. Stir in chocolate chips and pecans until evenly distributed.8. Drop dough by round tablespoonful onto an ungreased cookie sheet.9. Bake 8-10 minutes or until lightly golden brown. when finished baking transfer cookies to a cooling wire rack and let it cool for about a minute. Before storing the cookies in a highly sealed container, make sure the cookies are completely cool.
